  • 1 cup Quick Oats
  • 1 cup Crispy Rice Cereal
  • 1/2 cup mini Candy Corns (divided)
  • 3 tablespoons Halloween sprinkles (divided)

Wet Ingredients

  • 1/4 cup salted butter
  • 1/4 cup brown sugar
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract


Instructions

  1. Prepare Pan: Spray an 8×8 inch pan with non-stick spray and set it aside to ensure the granola bars do not stick after setting.
  2. Heat Wet Ingredients: In a medium bowl, combine the salted butter, brown sugar, and honey. Microwave on high for 1 minute and 30 seconds, stir, then microwave again for 2 minutes until the mixture is fully melted and combined.
  3. Mix Dry Ingredients: Pour in the quick oats, crispy rice cereal, and vanilla extract into the warm wet mixture. Stir thoroughly for several minutes until everything is very well combined.
  4. Add Candy and Sprinkles: Fold in half of the mini candy corns and 2 tablespoons of Halloween sprinkles to the mixture. Stir gently to distribute evenly.
  5. Press Mixture into Pan: Transfer the mixture to the prepared pan. Use a spatula or your hands to press down firmly, condensing the mixture into an even layer.
  6. Top and Press Candy: Sprinkle the remaining candy corns and sprinkles over the top of the bars. Press them firmly into the surface so they stick well.
  7. Chill to Set: Place the pan in the refrigerator and chill for about 1 hour to allow the bars to firm up and hold their shape.
  8. Cut and Serve: Remove from fridge and use a knife to lift one corner of the bars out of the pan. Transfer to a cutting board and cut first in half, then cut each large rectangle into 7 bars, yielding a total of 14 bars.
  9. Store Leftovers: Store any leftover granola bars in an airtight container. For convenience, package each bar in a small snack bag for grab-and-go snacking.
