Instructions
- Prepare the Pan: Line an 8×8 inch pan with parchment paper or aluminum foil and set aside to ensure easy removal of the fudge later.
- Combine Chocolate Mixture: In a medium mixing bowl, combine 16 ounces of white chocolate chips, ½ cup marshmallow cream, and 1 teaspoon vanilla extract. Set this mixture aside while you prepare the sugar mixture.
- Cook Sugar Mixture: In a medium heavy-bottomed saucepan, add 2 cups of sugar, 1 cup evaporated milk, and ½ cup butter. Heat over medium heat, stirring continuously with a wooden spoon until all ingredients are combined and the mixture comes to a low boil.
- Boil Sugar Mixture: Once boiling, stop stirring and allow the mixture to boil gently for 10 minutes without stirring. The mixture may darken slightly to a light caramel color—this is normal.
- Combine Sugar Mixture and Chocolate: Remove the saucepan from heat and immediately pour the hot sugar mixture over the white chocolate, marshmallow cream, and vanilla mixture in the bowl. Let it sit for a few minutes to soften the chocolate before stirring.
- Mix and Color: Stir the combined ingredients with a wooden spoon to incorporate them fully. Then, add a few drops of bright green gel food coloring. Using an electric mixer set to medium-low speed, beat the mixture until it is almost set. Add more green food coloring if needed to achieve a vivid Grinch green color.
- Pour and Decorate: Pour the green fudge mixture into the prepared 8×8-inch pan. Sprinkle the top evenly with red heart sprinkles for a festive look.
- Chill and Set: Place the pan in the refrigerator for about 2 hours to allow the fudge to firm up completely.
- Cut and Serve: Once set, remove the fudge from the fridge. Use the edges of the parchment paper or foil to lift the fudge out of the pan. Cut into 1 ½ inch squares and serve.
