Description

These Grilled BBQ Chicken and Pineapple Quesadillas are a delicious twist on traditional quesadillas, combining the smoky flavors of BBQ chicken with sweet pineapple and gooey cheese, all grilled to perfection. Serve with a tangy BBQ ranch dipping sauce for a flavor-packed meal.


Ingredients

For the Quesadillas:

  • 2 boneless skinless chicken breasts
  • 1/3 cup BBQ Sauce, divided (we love Bullseye Kansas or Memphis)
  • 8 taco size tortillas
  • 2 Tbsp butter, melted
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup small diced fresh pineapple, or canned pineapple tidbits
  • 2 green onions, sliced

For the BBQ Ranch Dipping Sauce:

  • 1/3 cup light ranch dressing
  • 3 Tbsp BBQ Sauce, (we love Bullseye Kansas or Memphis Style)

Instructions

  1. Preheat Grill: Preheat the grill. Smother half of the BBQ sauce on both sides of the chicken breasts and grill until cooked through. Dice the chicken and toss in the remaining BBQ sauce.
  2. Prepare Quesadillas: Combine cheeses. Butter tortillas and grill lightly. Add cheese, diced chicken, pineapple, and green onions. Grill until golden and cheese is melted.
  3. Make Dipping Sauce: Mix ranch dressing and BBQ sauce for dipping.
  4. Serve: Serve the quesadillas with the dipping sauce on the side. Enjoy!
