For the Chicken Marinade
- 1/3 cup full-fat plain Greek yogurt
- 1/4 cup extra virgin olive oil
- 1 1/2 lb boneless skinless chicken breasts or thighs, cubed
- 6 garlic cloves, chopped
- 2 shallots, chopped
- 1 tbsp smoked paprika
- 1 tbsp chopped fresh oregano
- Chili flakes, to taste
- Kosher salt, to taste
- Black pepper, to taste
For the Salad
- 2 Persian cucumbers, chopped
- 1 avocado, diced
- 2 tbsp lemon juice
- 1/4 cup fresh dill, chopped
- 6 oz crumbled feta cheese
For the Toppings
- Lettuce
- Peperoncini
- Onion
- Tomatoes
- Pitas
- 1 1/2 cup Tzatziki sauce
For the Ginger Tahini Sauce
- 1/2 cup tahini
- 2 tsp grated ginger
- 1 clove garlic, grated
- 2 tsp tamari
- 1 tbsp lemon juice
- 2 tsp honey
Instructions
- Prepare the Chicken Marinade: In a bowl, combine the yogurt, olive oil, cubed chicken, garlic, shallots, paprika, oregano, chili flakes, and a large pinch each of salt and pepper. Mix well to coat the chicken evenly. Let the chicken marinate for 15 minutes at room temperature or up to overnight in the refrigerator for more flavor.
- Cook the Chicken: Preheat the oven to 425°F. Arrange the marinated chicken pieces on a baking sheet in a single layer. Bake for 15 minutes, toss the chicken, and bake for another 5-10 minutes, or until cooked through. Switch the oven to broil and broil the chicken for 1-2 minutes until it develops a slight char on the edges.
- Make the Salad: While the chicken cooks, combine the chopped cucumbers, avocado, lemon juice, fresh dill, and a pinch of salt and pepper in a mixing bowl. Stir gently to combine.
- Prepare the Ginger Tahini Sauce: In a blender, combine the tahini, grated ginger, grated garlic, tamari, lemon juice, honey, and 1/4 cup of water. Blend until smooth. If the sauce is too thick, add water gradually until the desired consistency is reached. Season with salt, if needed.
- Assemble the Bowls: Begin by adding lettuce to each bowl as a base. Top with pieces of the cooked chicken, the cucumber and avocado salad, feta cheese, and additional toppings like onion, peperoncini, and tomatoes as desired. Add a few dollops of Tzatziki sauce and finish with a drizzle of the ginger tahini sauce. Serve with warm pita bread if desired.
