These Greek Chicken Bowls with Toasted Pearl Couscous are a delicious and satisfying meal that brings together flavorful marinated chicken skewers, toasted pearl couscous, refreshing tzatziki, and a variety of fresh toppings.

Greek Chicken Skewers

  • 3 large chicken breasts
  • 1 cup plain full-fat Greek yogurt
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced or pressed
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne
  • 2 teaspoons kosher salt

Toasted Pearl Couscous

  • 2 tablespoons unsalted butter
  • 1 large shallot sliced
  • 2 cloves garlic sliced
  • 2 cups pearl couscous
  • 2 1/2 cups vegetable stock or water
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 2 teaspoons fresh mint

Tzatziki

  • 1 cup plain full-fat Greek yogurt
  • 1 small cucumber finely grated
  • 2 cloves garlic minced or pressed
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh mint or dill
  • salt and pepper to taste

Serve With

  • tomato cucumber salad

  • crumbled feta

Instructions

  1. Greek Chicken Skewers – In a small bowl, whisk together all of the marinade ingredients. Cut chicken, add to marinade, marinate, skewer chicken, and cook.
  2. Toasted Pearl Couscous – Saute shallots and garlic, toast couscous, add stock, cumin, salt, and simmer until cooked. Stir in crispy shallots and mint.
  3. Tzatziki – Grate cucumber, mix with yogurt, garlic, olive oil, lemon juice, and mint. Season with salt and pepper, chill.
  4. Assemble the Bowls – Layer couscous, chicken, salad, chickpeas, feta, and tzatziki in bowls. Serve with pita or naan.

Notes

  • Store leftovers in airtight containers in the fridge for up to 5 days.
  • Reheat the couscous and chicken in the microwave for 1-2 minutes.
