  • 23 teaspoons honey to finish (hot honey recommended)

Instructions

  1. Prepare the ingredients. Slice the peaches, cucumbers, and shallots. For thin and even slices, use a mandoline if available. Gather the remaining ingredients and keep them ready.
  2. Create the cucumber-shallot base. Toss the sliced cucumbers and shallots with lime juice, lime zest, olive oil, salt, and pepper. Let the mixture sit for 5-15 minutes to allow the flavors to meld.
  3. Add peaches and mint. Gently fold in the sliced peaches, mint leaves, and a drizzle of hot honey. Be careful while mixing to avoid breaking the peach slices.
  4. Finishing touches and serving. Garnish with extra mint leaves, an additional drizzle of honey, and more salt and pepper if desired. Serve immediately, within an hour, for optimal freshness and flavor.
