Ingredients
Scale
Truffle Base
- 3 cups crushed gingersnap cookies (about 36 cookies)
- 1 cup cream cheese
Coating and Decoration
- 2 cups white chocolate chips
- Festive sprinkles
Instructions
- Process Gingersnaps: Place the gingersnap cookies into a food processor and pulse until they form fine crumbs. Alternatively, put the cookies in a ziplock bag and crush them with a rolling pin until finely ground.
- Combine with Cream Cheese: Add the cream cheese to the food processor and pulse in short bursts until the mixture resembles a dough. If a food processor is not available, transfer the crumbs to a mixing bowl and mix thoroughly with the cream cheese by hand.
- Prepare Baking Sheet: Line a cookie sheet with baking parchment paper to prevent sticking during chilling and coating.
- Form Dough Balls: Scoop out the dough by the tablespoon, then roll each portion into a ball using your hands. Arrange the balls evenly on the lined baking sheet.
- Chill the Dough: Place the baking sheet with dough balls into the freezer for 30 minutes or refrigerate for at least one hour until firm.
- Melt White Chocolate: Fill a small saucepan with a couple inches of water and bring it to a boil, then reduce to a simmer. Place white chocolate chips in a heatproof bowl and set it over the saucepan, ensuring the bowl doesn’t touch the water. Stir occasionally until melted and smooth, then remove from heat.
- Coat Truffles: Dip each chilled dough ball into the melted white chocolate, using two spoons to roll it around and coat evenly. Shake off any excess chocolate.
- Decorate: Place the coated truffles back on the baking sheet and immediately sprinkle with festive sprinkles while the chocolate is still wet.
- Set the Coating: Allow the coated truffles to set at room temperature for about one hour or refrigerate for 30 minutes until the chocolate hardens.
- Serve and Enjoy: Once set, serve the gingerbread truffles and enjoy their rich, festive flavors.
