  • 1 Tbsp fresh parsley (very finely chopped, plus more for garnish)
  • 2 garlic cloves (pressed)
  • 1 tsp dijon mustard
  • 1/4 tsp fine sea salt
  • 1/8 tsp freshly cracked black pepper
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp fresh lemon juice
  • 4 Tbsp unsalted butter (divided)


Instructions

  1. Prepare the Lobster Tails: Using kitchen shears, carefully cut down the top shell of each lobster tail lengthwise without cutting the meat. Gently pull the shell apart to expose the meat while keeping the tail attached at the end.
  2. Broil the Lobster: Preheat your oven’s broiler. Place the prepared lobster tails on a broiler-safe pan or baking sheet, shell side down, with the exposed meat facing up. Broil them for about 8-10 minutes, or until the lobster meat is opaque, white, and slightly browned on top. Keep a close eye to avoid overcooking.
  3. Make the Garlic Lemon Butter Sauce: While the lobster broils, melt 2 tablespoons of the unsalted butter in a small saucepan over medium heat. Add the pressed garlic cloves and sauté until fragrant but not browned, about 1 minute. Stir in the dijon mustard, lemon juice, olive oil, sea salt, black pepper, and finely chopped parsley. Remove from heat and whisk in the remaining 2 tablespoons of butter until the sauce is smooth and glossy.
