Potatoes:

Garlic Butter:
- 4 tablespoons ghee, divided
- 4 cloves garlic, minced
- 1 tablespoon rosemary, minced
- 2 tablespoons parsley, minced, plus more for garnish
Steak:
- 1 1/4 pounds sirloin steak, cut into cubes, against the grain, about 3/4-1” thick
- Sea salt and black pepper, to taste
Instructions
- Prepare Potatoes: Soften the potatoes in a microwave-safe bowl with water by microwaving on high for 5-6 minutes until barely fork-tender.
- Cook Potatoes: Brown the potatoes in a skillet with ghee, sea salt, and pepper until golden brown and tender.
- Add Flavors: During the last minute of cooking, add garlic, rosemary, and parsley to the potatoes.
- Cook Steak: In the same skillet, cook the seasoned steak cubes until nicely browned.
- Combine and Serve: Toss the steak with the potatoes, top with parsley, and serve hot.
