Calamari:

  • 1 pound calamari rings and tentacles

Buttermilk Marinade:

  • 1 cup buttermilk

Coating:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons salt, plus more for serving
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

For Frying:

  • Vegetable oil

Garnish:

  • 2 teaspoons chopped fresh parsley

Instructions

  1. Marinate the Calamari: Place the calamari in a bowl with the buttermilk and stir to combine. Cover and refrigerate for at least 30 minutes.
  2. Prepare for Frying: Heat oil in a large pot to 375 degrees F.
  3. Mix Coating: In a bowl, combine flour, salt, paprika, pepper, and garlic powder.
  4. Coat the Calamari: Dredge each piece of squid in the flour mixture.
  5. Fry the Calamari: Fry 8-10 pieces at a time until golden brown, about 2-3 minutes.
  6. Drain and Serve: Remove squid from oil, drain on paper towels, then sprinkle with salt and parsley. Serve hot.
