Description

Firecracker Chicken is a spicy and sweet dish that will ignite your taste buds. Tender chunks of chicken are coated in a sticky, fiery sauce that’s perfect for serving over rice or with a side of veggies.

Chicken:

  • 1 1/4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 1/3 cup cornstarch
  • 2 eggs, beaten
  • 3 tablespoons vegetable oil

Sauce:

  • 1/3 cup buffalo hot sauce
  • 1/2 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes, or more to taste
  • 1/4 cup sliced green onions

Additional:

  • Cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees F and coat a 9×13-inch pan with cooking spray.
  2. Season chicken: Season chicken pieces with salt and pepper. Toss chicken in cornstarch to coat, then dip in beaten eggs.
  3. Cook chicken: Cook chicken in oil over high heat until golden brown, working in batches if needed.
  4. Prepare sauce: Whisk together buffalo sauce, brown sugar, rice vinegar, and red pepper flakes.
  5. Combine chicken and sauce: Place cooked chicken in the prepared pan and pour sauce over it. Bake for 35 minutes, stirring halfway through.
  6. Serve: Garnish with green onions and serve hot.
