For the Balls:

  • 100g hazelnuts, blitzed
  • 60g smooth, runny hazelnut butter
  • 1 tbsp coconut oil, melted
  • 1 tbsp coconut yoghurt
  • 2 tbsp maple syrup
  • 2 tbsp cocoa powder
  • 4 tbsp vegan chocolate protein powder
  • A pinch of salt
  • 14 whole hazelnuts

For the Coating:

  • 100g dark chocolate
  • 1 tbsp smooth, runny hazelnut butter
  • 1 tsp coconut oil
  • 100g hazelnuts, crushed small

Instructions

  1. Blitz the hazelnuts: Pulse the 100g hazelnuts until finely ground like almond meal.
  2. Mix the wet ingredients: Combine hazelnut butter, melted coconut oil, yoghurt, and maple syrup until smooth.
  3. Add dry ingredients: Mix in hazelnut meal, cocoa powder, chocolate protein powder, and salt to form a sticky mixture.
  4. Shape the balls: Divide the mixture into 14 portions, roll into balls, press a hazelnut into each, and shape the mixture around it. Chill for 20 minutes.
  5. Prepare the coating: Melt dark chocolate, hazelnut butter, and coconut oil until smooth. Coat each ball with chocolate, roll in crushed hazelnuts, and chill for 10 more minutes.
  6. Serve: Enjoy immediately or store in the fridge for up to a week or freeze for a month. Defrost before serving.
