Description

Haluski is a traditional Eastern European comfort dish combining tender egg noodles, sautéed cabbage, and flavorful kielbasa, all richly enhanced with butter and a hint of mustard. This easy-to-make skillet meal delivers a savory and hearty experience perfect as a side or main course, ready in under 30 minutes.

Ingredients

Scale

Noodles

  • 8 oz. uncooked no-yolk egg noodles (½-inch wide recommended, but any size works)

Meat

  • 6 oz. kielbasa, cut into small 1″ pieces

Vegetables

  • 1 large onion, chopped (about 2 cups)
  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 lbs.), core removed and cut into 1½” bite-sized pieces

Other Ingredients

  • 6 tbsp salted butter, divided
  • 1 tsp mustard (spicy brown or Dijon), optional
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper

Instructions

  1. Cook Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente according to package directions. Drain the noodles well and set aside.
  2. Sauté Kielbasa: Heat 2 tablespoons of butter in a deep nonstick skillet over medium-high heat until bubbly. Add the kielbasa pieces and sauté for about 3 minutes, stirring occasionally, until they are browned and crisp. Remove the kielbasa with a slotted spoon and transfer to a plate, leaving the rendered fat in the pan.
  3. Cook Vegetables: Add the chopped onions, minced garlic, cabbage pieces, and 2 more tablespoons of butter to the skillet with the kielbasa fat. Reduce the heat to medium and sauté the mixture, stirring frequently, until the cabbage becomes tender, about 8 minutes depending on your preferred tenderness.
  4. Combine and Season: Return the cooked noodles and kielbasa to the skillet with the cabbage mixture. Toss everything together to combine and heat through evenly. Stir in the remaining 2 tablespoons of butter and the optional mustard. Season with kosher salt and freshly ground black pepper to taste.
  5. Serve: Serve the Haluski immediately while hot and enjoy this comforting dish as a satisfying entree or side.
