Instructions
- Cook Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente according to package directions. Drain the noodles well and set aside.
- Sauté Kielbasa: Heat 2 tablespoons of butter in a deep nonstick skillet over medium-high heat until bubbly. Add the kielbasa pieces and sauté for about 3 minutes, stirring occasionally, until they are browned and crisp. Remove the kielbasa with a slotted spoon and transfer to a plate, leaving the rendered fat in the pan.
- Cook Vegetables: Add the chopped onions, minced garlic, cabbage pieces, and 2 more tablespoons of butter to the skillet with the kielbasa fat. Reduce the heat to medium and sauté the mixture, stirring frequently, until the cabbage becomes tender, about 8 minutes depending on your preferred tenderness.
- Combine and Season: Return the cooked noodles and kielbasa to the skillet with the cabbage mixture. Toss everything together to combine and heat through evenly. Stir in the remaining 2 tablespoons of butter and the optional mustard. Season with kosher salt and freshly ground black pepper to taste.
