Ingredients
Scale
Chicken
- 3 boneless skinless chicken breasts, cut in half horizontally to make 6 breast halves
- Salt and pepper, to taste
- 3 Tablespoons oil
Breading
- ½ cup freshly grated parmesan cheese, divided
- 2 eggs
- 1 cup panko bread crumbs
- 1 cup Italian style bread crumbs (or panko)
- 1 teaspoon garlic powder
Toppings & Sauce
- 24 ounces marinara sauce (or homemade)
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for serving
Instructions
- Preheat Oven: Preheat the oven to 450 degrees F to prepare for baking the chicken parmesan later.
- Prepare Chicken: Butterfly the chicken breasts by slicing each breast in half horizontally for thinner pieces. Pat the chicken dry and season well on both sides with salt and pepper.
- Make Breading Mixtures: In one shallow bowl, beat the eggs thoroughly. In another shallow bowl, combine panko bread crumbs, Italian style bread crumbs, half of the parmesan cheese, and garlic powder.
- Bread Chicken: Dip each chicken piece into the egg mixture, then press it firmly into the breadcrumb mixture to coat both sides completely.
- Brown Chicken: Heat oil in a large skillet over medium-high heat. Once hot, add the breaded chicken pieces and cook for about 2 minutes per side until golden brown but not fully cooked through.
- Assemble for Baking: Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking pan. Place the browned chicken on top of the sauce. Spoon additional marinara sauce over each chicken piece, then sprinkle with shredded mozzarella and the remaining parmesan cheese.
- Bake: Bake in the preheated oven for 10-15 minutes or until the cheese is melted, bubbly, and the chicken reaches an internal temperature of 165 degrees F.
- Garnish and Serve: Remove from oven, garnish with fresh chopped basil leaves, and serve hot over cooked spaghetti noodles with extra marinara sauce if desired.
