Instructions
- Prepare pasta: Bring a large pot of salted water to a boil and cook the rigatoni pasta according to the package instructions until al dente. Drain and set aside.
- Bread the chicken: While the pasta water is heating, slice the chicken breasts if preferred, or use whole small breasts. Set up a breading station with three shallow dishes: one with flour mixed with seasoned salt and pepper, one with beaten eggs, and one with Italian breadcrumbs. Dredge the chicken pieces in the flour, then dip in the eggs, and finally coat thoroughly with the breadcrumbs.
- Fry the chicken: Heat vegetable oil and butter in a large skillet over medium heat. Once hot, fry the breaded chicken pieces until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
- Assemble the casserole: Preheat the oven to 350°F (175°C). In a large baking dish, spread a layer of marinara sauce. Add the cooked rigatoni pasta and toss to coat well with the sauce.
