Cinnamon Glaze
- 1 cup (120 g) confectioners’ sugar (sifted)
- 1/2 teaspoon ground cinnamon
- 2 tablespoons heavy cream or milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to ensure the scones do not stick during baking.
- Mix Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, ground cinnamon, allspice or cloves if using, baking powder, and salt to create a uniform dry base for the dough.
- Incorporate Butter: Using a box grater, shred the frozen unsalted butter into the dry ingredients. Then whisk or gently toss the butter pieces into the flour mixture, distributing evenly but leaving some larger crumbles for a flaky texture.
- Combine Wet Ingredients: In a separate bowl or measuring cup, whisk together 2/3 cup of cold heavy cream and the cold egg until smooth. Pour this mixture into the dry ingredients.
- Add Shredded Apple and Mix: Add the peeled and shredded apple to the bowl. Using a wooden spoon or silicone spatula, gently mix until large dough crumbles form. Avoid overmixing to keep the scones tender. Use your hands to form the dough into a loose ball.
