- 2 Tablespoons Medjool dates, pitted and soaked
- 1–2 Tablespoons water
For the Apple Slices:
- 1 large apple, preferably Honeycrisp
- 2 Tablespoons date caramel
- 2 Tablespoons unsweetened coconut flakes
- 2 Tablespoons chocolate chips, dairy-free if needed
- 1/2 teaspoon coconut oil
Instructions
- Prepare the Date Caramel: Blend the soaked dates with water until smooth to make the date caramel.
- Toast the Coconut: Toast the coconut flakes in a pan over medium-low heat for 3-6 minutes, stirring continuously.
- Prepare the Apple Slices: Cut the apple into 1/4″ slices, remove the core using a melon baller, and spread date caramel on each slice.
- Add Toppings: Sprinkle toasted coconut over the date caramel.
- Make Chocolate Drizzle: Melt chocolate chips and coconut oil together, then drizzle over the apple slices.
- Serve: Enjoy immediately or chill to set the chocolate.
