- 3 boneless skinless chicken breasts (cooked and shredded)
- 2 (15 oz) jars Alfredo sauce (preferably Bertolli brand)
- 1 cup water
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 16 oz uncooked penne pasta
- 3 cups shredded Mozzarella cheese
- 1/4 cup Parmesan cheese
- Chopped parsley (optional, for garnish)
Instructions
- Prepare sauce and pasta: In a mixing bowl, combine the Alfredo sauce, water, salt, pepper, and minced garlic. Stir in the uncooked penne pasta until it is evenly coated with the sauce mixture.
- Prepare crock pot: Spray a 6-quart crock pot with non-stick spray to prevent sticking during cooking.
- Layer ingredients in crock pot: Place half of the penne and Alfredo sauce mixture into the bottom of the crock pot. Spread half of the shredded cooked chicken evenly on top. Sprinkle 1 cup of shredded Mozzarella cheese and 1/8 cup of Parmesan cheese over the chicken.
- Add remaining layers: Add the remaining penne and sauce mixture over the cheese layer. Then evenly spread the remaining chicken on top. Follow with another cup of Mozzarella cheese and 1/8 cup of Parmesan cheese.
- Cook: Place the lid on the crock pot and cook on low for 2 1/2 to 3 hours, until the pasta is tender and the casserole is bubbly.
- Final cheese layer: Remove the lid and sprinkle the remaining 1 cup of Mozzarella cheese evenly on top. Allow it to melt completely with the crock pot off or on warm setting.
- Garnish and serve: Sprinkle chopped parsley on top, if desired, then serve hot for a creamy and filling meal.
