Description

This recipe for Crispy Roasted Mushrooms with Garlic & Thyme offers a delicious way to enjoy a medley of chestnut, shiitake, and oyster mushrooms. Roasted to golden perfection with fragrant garlic and fresh thyme, these mushrooms are crispy, flavorful, and make a perfect side or snack.

Ingredients

Scale

Mushrooms

  • 400 grams chestnut mushrooms (about 1 lb)
  • 200 grams shiitake mushrooms (about 1/2 lb)
  • 200 grams oyster mushrooms (about 1/2 lb)

Seasoning

  • 8 tablespoons olive oil
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt
  • 3 cloves garlic, sliced
  • 5 sprigs fresh thyme

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it’s hot enough for roasting the mushrooms evenly.
  2. Prepare Mushrooms: Thoroughly wash the mushrooms, rubbing them to remove any dirt. Once clean, drain well in a colander and slice the mushrooms thinly for even roasting.
  3. Arrange and Season: Lay the mushroom slices out in a single layer on a parchment-lined baking sheet. Drizzle the olive oil evenly over them, then sprinkle with black pepper and salt for seasoning.
  4. Initial Roasting: Roast the mushrooms in the preheated oven for 20 minutes. After this, check and drain any excess liquid if needed, then carefully flip each mushroom slice over using a fork.
  5. Continue Roasting: Roast for another 20 minutes or until the mushroom slices are evenly golden brown. If they need it, add a little more olive oil or roast longer to achieve crispiness.
  6. Add Garlic and Thyme: When the mushrooms are about 5 minutes from being perfectly crispy, sprinkle the sliced garlic and fresh thyme over the top. Continue roasting for an additional 5 minutes until the mushrooms are crispy and fragrant.
  7. Serve: Remove from oven and garnish with extra fresh garlic and thyme if desired. Serve hot for the best flavor and texture.

Notes

  • Using thinly sliced mushrooms helps achieve a crisp texture when roasting.
  • Draining excess liquid partway through roasting prevents sogginess.
  • If mushrooms are not crispy enough, add a bit more olive oil and roast a few more minutes.
  • This recipe makes about 1.5 cups of roasted mushrooms, suitable for 6 servings.
  • Enjoy immediately while hot for optimal crispiness.
