Orzo Mixture:
- 1 cup orzo, dry
- 2 cups low sodium chicken broth
- 1/4 cup full-fat canned coconut milk or heavy cream
- 1 Tbsp low sodium soy sauce
- 1 tsp onion powder
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tsp fresh or dried thyme
- 1/2 cup freshly grated parmesan cheese
- 2 cups baby spinach leaves
Instructions
- Cook the Sausage: Drizzle olive oil in a large skillet over medium-high heat and cook the sliced chicken sausage until browned, about 6 to 7 minutes.
- Add Aromatics: Add minced garlic and sauté for about 30 seconds, being careful not to burn it.
- Toast Orzo: Add dry orzo to the skillet and toast it with the sausage and garlic for about 60 seconds.
- Add Liquid: Pour in chicken broth to deglaze the pan, then add coconut milk, soy sauce, seasonings, and thyme. Mix well.
- Simmer Orzo: Bring the mixture to a boil, cover, and let it simmer for 10 to 12 minutes, stirring occasionally.
- Finish: Stir in spinach until wilted, then mix in parmesan cheese. Season with salt and pepper to taste.
