- 1 tbsp Olive Oil
- 8 Thick Pork Sausages
- 1 tbsp Butter

- 1 tbsp Tomato Puree
- 1 tsp Dijon Mustard

- 350 ml Chicken Stock
- 200 ml Creme Fraiche (or soured cream)
- 2 tbsp Parsley (chopped)
Instructions
- Brown the Sausages: Heat the olive oil in a pan over medium heat. Add the thick pork sausages and cook until they are well browned on all sides. Once browned, remove the sausages to a plate and set aside.
- Cook the Vegetables: In the same pan, add the butter. Once melted, add the finely chopped onion, garlic cloves, and sliced chestnut mushrooms. Cook until the vegetables are softened and the mushrooms release their moisture, about 5-7 minutes.
- Add Flavorings: Stir in the tomato puree, Dijon mustard, and smoked paprika to the softened vegetables. Mix well to combine all the flavors evenly.
- Simmer with Stock and Sausages: Pour in the chicken stock, then return the browned sausages to the pan. Bring to a gentle simmer and let cook uncovered for 15 minutes to allow the flavors to meld and the sausages to cook through.
- Finish with Creme Fraiche: Lower the heat and stir in the creme fraiche or soured cream until the sauce is creamy and well combined. Adjust seasoning with salt and pepper to taste.
