Ingredients
Scale
Chicken
- 3 large chicken breasts (boneless and skinless, sliced lengthwise into thin cutlets)
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 6 tablespoons all-purpose flour
Cooking Fats
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
Sauce
- 3 cloves garlic (minced)
- 1 cup chicken stock
- 1 cup heavy cream (double cream in the UK)
- ½ cup parmesan cheese (grated)
- 1 teaspoon chili flakes
- ¼ teaspoon oregano
- ¼ teaspoon thyme
- ⅓ cup sundried tomatoes (chopped)
Garnish
- 1 tablespoon fresh basil leaves
Instructions
- Season and Dredge the Chicken: Season the sliced chicken breasts with salt and pepper evenly. Dredge each piece in the all-purpose flour, then shake off any excess flour to ensure a light coating.
- Brown the Chicken: Heat the olive oil and melt the butter in a large skillet over medium heat, swirling the pan to coat it evenly. Add the chicken cutlets in batches, making sure not to overcrowd the pan, and cook for 4-5 minutes on each side or until golden brown and fully cooked. Transfer the cooked chicken to a plate, cover, and set aside.
- Sauté Garlic: In the same skillet, add the minced garlic and sauté for about one minute until fragrant, being careful not to burn it.
- Deglaze the Pan: Pour in the chicken stock and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. This adds depth of flavor to the sauce.
- Add Cream and Cheese: Reduce the heat to medium-low and stir in the heavy cream and grated parmesan cheese. Allow the sauce to simmer gently for a couple of minutes until it starts to thicken.
- Season the Sauce: Add chili flakes, oregano, thyme, and adjust salt and pepper to taste. Stir well to combine all flavors.
- Add Sundried Tomatoes and Return Chicken: Stir in the chopped sundried tomatoes, then return the browned chicken cutlets to the skillet. Let the sauce simmer with the chicken for a few more minutes until the sauce thickens and the chicken is heated through.
- Garnish and Serve: Garnish the finished dish with chopped fresh basil leaves. Serve warm over pasta or rice to enjoy the creamy, flavorful sauce with tender chicken.
