Description

This comforting Chicken Casserole is a creamy, cheesy dish featuring shredded rotisserie chicken mixed with cream of chicken soup, sour cream, and aromatic spices. Topped with a crunchy buttered Ritz cracker and cheddar cheese crust, it’s baked to bubbling perfection and perfect for a hearty family dinner or meal prep.

Ingredients

Scale

Chicken Mixture

  • 2 (10.5-ounce) cans condensed cream of chicken soup
  • 1 cup sour cream (240g)
  • 1½ teaspoons onion powder
  • 1½ teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 8 cups shredded cooked chicken (about 1kg/2 rotisserie chickens)
  • 1½ cups shredded cheddar cheese (about 170g)

Topping

  • 2 full sleeves Ritz crackers (lightly crushed, 250g)
  • 4 tablespoons melted butter (56g)
  • ½ cup shredded cheddar cheese (about 55g)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly spray a 13×9-inch casserole dish with cooking spray to prevent sticking.
  2. Mix the Chicken Filling: In a large bowl, combine the condensed cream of chicken soup, sour cream, onion powder, garlic powder, kosher salt, and ground black pepper. Stir until smooth and well blended. Fold in the shredded cooked chicken and 1½ cups of shredded cheddar cheese until evenly mixed.
  3. Assemble the Casserole: Transfer the chicken mixture into the prepared casserole dish, spreading it evenly for uniform baking.
  4. Prepare the Topping: In a medium bowl, mix the lightly crushed Ritz crackers with the melted butter until the crackers are fully coated.
  5. Add Topping and Cheese: Sprinkle the buttered cracker mixture evenly over the chicken filling in the casserole dish. Then, sprinkle the remaining ½ cup of cheddar cheese evenly on top of the cracker layer.
  6. Bake the Casserole: Place the casserole in the preheated oven and bake for 35 to 40 minutes, or until the filling is bubbling around the edges and the cracker topping is lightly browned and crisp.
  7. Cool and Serve: Remove the casserole from the oven and let it cool for 15 to 20 minutes. This resting time allows it to thicken and set for easier serving. Enjoy warm.

Notes

  • Chicken Casserole is perfect for an easy and hearty dinner, combining creamy chicken filling with a crunchy, buttery cracker topping.
  • Using pre-cooked rotisserie chicken saves time and adds great flavor.
  • For a different flavor twist, try substituting the cheddar with Monterey Jack or pepper jack cheese.
  • Leftovers store well covered in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
