Ingredients
Scale
Main Ingredients
- 1 small onion, chopped
- 1 tbsp olive oil
- 1 head (350 g / 12 oz) broccoli florets only
- 750 ml (3 cups) vegetable or chicken stock
- 2-3 tbsp blue cheese or sour cream
- 100 g (3.5 oz) smoked gouda or cheddar, shredded
- Salt and pepper, to taste
- 4 tbsp single cream (optional)
- 1 tbsp sesame seeds, nigella seeds, or poppy seeds (for garnish)
Instructions
- Sauté the onion: In a medium pot, heat the olive oil over low heat and cook the chopped onion for about 5 minutes until it begins to soften, creating a flavorful base for the soup.
- Cook broccoli in stock: Add the broccoli florets to the pot along with the vegetable or chicken stock. Bring to a boil, then reduce heat, cover with a lid, and simmer for 15 minutes until the broccoli is tender.
- Blend the soup: When broccoli is cooked through, use a food processor or immersion blender to process the soup in batches or directly in the pot. Add the blue cheese during blending to enhance the creaminess and flavor.
- Heat and incorporate gouda: If you used a food processor, return the blended soup to the pot and gently heat it until it simmers. Remove from heat and stir in the shredded smoked gouda until fully melted and blended.
- Season and serve: Season the soup with salt and pepper to taste, adjusting based on the saltiness of your cheeses and stock. Garnish with single cream and your choice of sesame, nigella, or poppy seeds if desired, and serve immediately for best flavor.
Notes
- The smoky gouda adds a delicious depth of flavor making this classic cream of broccoli soup extra special.
- You can substitute smoked gouda with smoked cheddar for a similar smoky taste.
- Single cream is optional but adds extra richness and smooth texture.
- Use an immersion blender for ease and fewer dishes.
- Adjust seasoning carefully since cheese and stock can add saltiness.
