Instructions
- Prepare the egg whites: Add the room-temperature egg whites to the bowl of a stand mixer or a large bowl if using a hand-held electric mixer. Whisk on medium-high speed until soft peaks form, indicating the egg whites are aerated but still moist.
- Add sugar gradually: Gradually add the granulated sugar, about 2 tablespoons at a time, whisking well between each addition to fully incorporate the sugar and create a glossy, stiff peak meringue.
- Divide and color: Divide the meringue into separate bowls depending on the number of colors you want, for example three bowls for three colors. Gently fold in a few drops of gel food coloring into each bowl until you reach the desired shade.
- Pipe meringue lollipops: Spoon some of each colored meringue into a piping bag fitted with a star nozzle, layering colors if desired, one on each side of the bag. Pipe 2-inch circles onto a baking sheet lined with parchment paper or a Silpat mat, starting from the center and working outward for even shapes.
- Insert sticks and decorate: Insert a lollipop stick into the center of each piped circle. Add sprinkles on top for decoration, gently pressing them into the meringue to ensure they adhere.
- Bake the meringues: Bake in a preheated oven at 200°F (93°C) for 60 minutes to dry out the meringues without browning. After baking, turn off the oven and let the meringues cool completely inside to dry further and ensure crispness.
