Truffle Mixture

  • 90 ml (1/3 cup + 2 tsp) thickened/whipping cream
  • 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
  • 1 tbsp instant coffee granules

Coating

  • 125 g (4.5 oz) milk cooking chocolate, broken into even size pieces


Instructions

  1. Prepare the dish: Line a small, flat dish (approximately 13 x 18 cm or 7 x 5 inches) with non-stick baking paper. Also, line a baking tray with non-stick baking paper and set aside for the finished truffles.
  2. Heat the cream: Pour the cream into a small saucepan and gently heat it over low heat, stirring occasionally, until it is just below boiling point. Avoid boiling to prevent separation.
  3. Add chocolate and coffee: Turn off the heat and immediately add the finely chopped dark cooking chocolate and instant coffee granules to the saucepan. Stir continuously until the chocolate is completely melted and the mixture is smooth and glossy.
  4. Chill the mixture: Pour the chocolate and coffee mixture into the prepared dish. Transfer it to the refrigerator and allow it to chill for about 2 hours, or until firm enough to scoop and roll into balls.
  5. Form truffle balls: Using a small ice cream scoop or teaspoon, scoop about 3 level teaspoons of mixture at a time. Roll each portion into a compact small ball with your hands. If the mixture is too firm to roll, let it sit at room temperature for 5-10 minutes to soften slightly. Place each truffle ball on the lined baking tray. Refrigerate for at least 30 minutes to firm up.
  6. Keep hands cool: While rolling, keep an ice pack or a pack of frozen peas nearby to cool your hands and prevent the truffles from melting. Have paper towels ready to dry your hands as needed.
  7. Melt coating chocolate: Place the milk cooking chocolate in a heatproof bowl. Set this bowl over a pan of barely simmering water, making sure no water gets into the chocolate. Stir occasionally until the chocolate is almost melted. Remove the bowl from heat and let residual warmth melt the remaining chocolate. Allow the chocolate to cool for about 15 minutes to avoid softening the truffles during coating.
  8. Coat the truffles: Remove the truffles from the fridge. Working one at a time, dip each ball into the melted chocolate using two small forks to fully coat. Lift the truffle out using the forks, tapping and smoothing on the edge of the bowl to remove excess coating. Place the coated truffle back onto the lined tray. If the chocolate cools and becomes too firm to dip, gently reheat and continue.
  9. Set the coating: Once all the truffles are coated, refrigerate the tray for about 30 minutes until the coating is crisp and set. Optionally, reheat any remaining chocolate and drizzle over the truffles as decoration before the final set.
  10. Storage: Store the coffee truffles in an airtight container in the refrigerator for up to one week. If storing in multiple layers, separate layers with non-stick baking paper to prevent sticking.
