Instructions

  1. Prepare Corn Kernels: Cut the kernels off 6 fresh corn cobs to yield 4-5 cups of corn. Break up the kernels individually to ensure even cooking.
  2. Add Ingredients to Instant Pot: Place the corn kernels, 1 ½ cups of water, and 1 teaspoon of sea salt into the Instant Pot. Mix all the ingredients well to combine.
  3. Pressure Cook: Lock the Instant Pot lid securely and cook on high pressure for 4 minutes to soften the corn and infuse flavors.
  4. Release Pressure: When cooking is complete, perform a quick release to safely release the pressure, then carefully remove the lid.
  5. Sauté and Add Flavorings: Switch the Instant Pot to the sauté setting. Add ½ cup butter, chopped cilantro leaves, lime zest, and ¼ teaspoon cayenne pepper to the pot. Stir continuously until the butter is fully melted and ingredients are well combined.
