Cupcake Batter
- 200 g unsalted butter

Instructions
- Prepare the Cupcake Batter: Preheat your oven to 180°C (350°F). In a large mixing bowl, cream together 200 g unsalted butter and 200 g light brown soft sugar until light and fluffy. Gradually beat in the 4 medium eggs, one at a time, followed by 1 tsp vanilla extract.
- Sift Dry Ingredients: In a separate bowl, sift together 150 g self-raising flour and 50 g cocoa powder. Gently fold the dry ingredients into the wet mixture until fully combined, taking care not to overmix to keep the batter light.
- Bake the Cupcakes: Line a cupcake tin with 12 paper cases and evenly distribute the batter among them. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely on a wire rack.
- Make the Buttercream Frosting: Using a mixer, beat 200 g unsalted butter (softened) until creamy. Gradually add 400 g icing sugar and continue beating until smooth and fluffy. Mix in 1 tsp vanilla extract and 1 tsp green food colouring until the frosting achieves an even green hue.
- Decorate the Cupcakes: Once the cupcakes are completely cooled, pipe the green buttercream onto each cupcake in a tall, tree-like swirl. Decorate with chocolate stars, sprinkles, and dust lightly with icing sugar to create a snowy effect.
