Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) to prepare for baking the assembled chicken parmesan.
  2. Prepare breading stations: Place flour in a shallow dish. Beat eggs in a second dish, seasoned with salt and pepper. Mix Panko, Italian breadcrumbs, grated Parmesan, chopped parsley, salt, and pepper in a third shallow dish.
  3. Bread chicken: Dip each chicken piece into flour, shaking off excess. Then into the beaten eggs, and finally into the breadcrumb mixture, pressing to adhere firmly.
  4. Fry chicken: Heat oil in a large skillet over medium-high heat. Fry the breaded chicken until golden brown on each side, about 4 minutes per side, ensuring a crispy exterior but not fully cooked through. Alternatively, air fry at 380°F for 7 minutes, flipping halfway.
  5. Assemble dish: Spread 1 ½ cups of marinara sauce in the bottom of a 9×13-inch baking dish. Place browned chicken on top. Spoon additional marinara sauce over each piece, then sprinkle with shredded mozzarella, grated Parmesan, and chopped basil.
  6. Bake: Bake uncovered for 10-15 minutes until cheese is bubbly and golden, and chicken registers 165°F (74°C). Remove from oven and let rest for a few minutes.
