Description

Cheesy Chicken Garlic Bread is a delicious and hearty dish that combines the flavors of tender chicken, red peppers, onions, and gooey cheese on garlic baguettes. It’s a perfect meal for a cozy night in or a casual gathering with friends and family.

For the Cheesy Chicken Filling:

  • 23 garlic bread baguettes
  • 1 tablespoon oil
  • 400 g chicken mini fillets (tenderloins US)
  • 1 red pepper, very thinly sliced
  • 1 small red onion, sliced
  • 190 g jar red pesto (such as Tesco’s Red Pepper Cremosa Pesto)
  • 250 g bag grated mozzarella & cheddar mix or just mozzarella

For Baby & Toddler:

  • Ingredients as needed for deconstructed serving

Instructions

  1. Preheat the oven: Preheat the oven to 200ºC/180ºC fan/400ºF/gas 6.
  2. Cook the chicken: Heat oil in a pan, cook chicken until golden and cooked through. Remove and set aside.
  3. Prepare the filling: In the same pan, cook red pepper and onion until soft. Add chicken back in, stir in pesto.
  4. Assemble and bake: Slice garlic baguettes, fill with chicken mix, top with cheese. Bake until cheese is golden.
  5. Serve: Cut the baguettes and serve hot.

Notes
