For the Cheesy Chicken Filling:
- 2–3 garlic bread baguettes
- 1 tablespoon oil
- 400 g chicken mini fillets (tenderloins US)
- 1 red pepper, very thinly sliced
- 1 small red onion, sliced
- 190 g jar red pesto (such as Tesco’s Red Pepper Cremosa Pesto)
- 250 g bag grated mozzarella & cheddar mix or just mozzarella

- Ingredients as needed for deconstructed serving
Instructions
- Preheat the oven: Preheat the oven to 200ºC/180ºC fan/400ºF/gas 6.
- Cook the chicken: Heat oil in a pan, cook chicken until golden and cooked through. Remove and set aside.
- Prepare the filling: In the same pan, cook red pepper and onion until soft. Add chicken back in, stir in pesto.
- Assemble and bake: Slice garlic baguettes, fill with chicken mix, top with cheese. Bake until cheese is golden.
- Serve: Cut the baguettes and serve hot.
Notes
- For baby and toddler servings, consider deconstructing the dish to suit their needs.
- For fussy eaters, customize by omitting ingredients they may not enjoy.
