Scale
Vegetables
- 1 head cauliflower (cut into florets)
- 4 cloves garlic (minced)
- 1/4 cup green onions
Dairy
- 4 oz cream cheese
- 1/2 cup plain Greek yogurt
- 1 1/2 cups grated Parmesan cheese (divided)
- 1/2 cup shredded white cheddar cheese
Other
- 2 Tbsp olive oil
- 1/4 tsp salt
- Pinch of red pepper flakes
Instructions
- Preheat oven: Set your oven to 400 degrees F to prepare for roasting the cauliflower.
- Roast cauliflower: In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a foil-lined baking sheet. Roast in the oven for 25 to 30 minutes, tossing once halfway through to ensure even cooking and caramelization.
- Prepare cauliflower dip base: Once roasted, transfer the cauliflower to a food processor. Add the minced garlic, cream cheese, Greek yogurt, 1 cup of Parmesan cheese, white cheddar cheese, and salt. Process until the mixture is smooth and creamy.
- Mix in flavorings: Stir in the chopped green onions and a pinch of red pepper flakes to the processed mixture for added flavor and a slight kick.
- Bake the dip: Transfer the creamy cauliflower mixture into a small baking dish or an 8-inch skillet. Sprinkle the remaining 1/2 cup of Parmesan cheese on top. Bake for about 20 minutes until the dip is golden and bubbly.
- Serve: Remove the dip from the oven and garnish with additional green onions. Serve warm with baguette slices, crackers, or your favorite vegetables for dipping. Enjoy!
