Description

Cheeseburger Soup is a hearty and flavorful soup that combines all the classic flavors of a cheeseburger in a comforting bowl. This soup is creamy, cheesy, and loaded with ground beef, potatoes, and a blend of delicious seasonings.

Ground Beef Mixture:

  • 1 pound ground beef or turkey
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1 teaspoon dried parsley flakes

Soup Base:

  • 4 tablespoons butter, divided
  • 3 cups chicken broth
  • 4 1/2 cups potatoes, peeled and diced
  • 1/4 cup all-purpose flour
  • 1 16 oz can diced tomatoes
  • 3 cups Velveeta cheese, cubed (cheddar can also be used)
  • 1 1/2 cups milk

Garnish:

  • 4 slices bacon
  • Shredded cheddar cheese for topping

Instructions

  1. Brown the Ground Beef: In a saucepan, brown the ground beef or turkey. Drain and set aside.
  2. Saute Vegetables: In the same saucepan, add 1 tablespoon of butter and saute onion, celery, and parsley flakes until tender.
  3. Add Ingredients: Add broth, potatoes, diced tomatoes, and cooked beef to the saucepan. Bring to a boil, then cover and simmer until potatoes are tender.
  4. Prepare Roux: Cook bacon in a frying pan, then set aside. In the same pan, melt remaining butter, add flour, and cook until bubbly. Add to the soup and cook until thickened.
  5. Add Cheese and Milk: Stir in cheese and milk until melted. Blend in sour cream.
  6. Garnish and Serve: Garnish with crumbled bacon and shredded cheddar cheese before serving.
