- 1 box Cheddar Bay biscuit mix
- 1 cup shredded cheddar cheese
- 2 cups milk
- 1/4 cup butter, melted
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C).
- Cook roast beef: Drop the chopped roast beef into a large skillet over medium-high heat. Stir and cook for a couple of minutes to start warming it up.
- Add vegetables: Add the diced onions and diced bell peppers to the skillet. Stir well and continue cooking until the peppers and onions have softened.
- Add seasoning: Add the chopped garlic and steak spice to the skillet. Stir and cook for an additional 3 minutes to evenly combine the flavors.
- Add soup and milk: Reduce the heat to low, then add both cans of cheddar soup and the milk. Stir thoroughly until the mixture is smooth and well incorporated.
- Add cheese: Stir in the shredded cheddar cheese until it melts into the mixture. Remove the skillet from the heat.
- Prepare baking dish: Spray a 9 x 13-inch baking dish well with cooking spray, ensuring the surface is fully coated.
- Pour beef mixture: Transfer the roast beef mixture into the prepared baking dish, spreading it out evenly to cover the bottom.
- Prepare biscuit batter: Pour the biscuit mix into a mixing bowl and set the seasoning packet aside for later. Add the shredded cheddar cheese and milk to the bowl, stirring until no large lumps remain.
- Apply topping: Pour the biscuit batter over the roast beef mixture in the baking dish, spreading it to cover the entire surface.
- Bake cobbler: Place the baking dish in the preheated oven and bake for 50–55 minutes, or until the biscuit topping is nicely browned across the entire top.
- Prepare butter topping: In a small bowl, combine the melted butter with the seasoning packet from the biscuit mix. Stir well to combine.
- Brush topping: Remove the baking dish from the oven. Brush the butter and seasoning mixture generously over the biscuit topping.
- Rest and serve: Allow the cobbler to rest for about 5 minutes, letting the biscuit soak up the butter. Serve warm and enjoy!
Notes
- Ensure the roast beef slices are chopped evenly for consistent cooking and distribution.
- You can customize the dish by adding mushrooms or other vegetables if desired.
- This recipe works well with any pre-made biscuit mix if you can’t find Cheddar Bay biscuit mix.
