Beef Mixture:

- 1.5 lbs lean ground beef
- 1 yellow onion, diced
- 1 tablespoon chopped garlic
- 10.5 oz condensed cheddar soup
- 10.5 oz condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded cheddar cheese
Topping:
- 1 box Cheddar Bay Biscuit mix
- 1 cup shredded cheddar cheese
- 2 cups milk
- 1/4 cup butter, melted
- Fresh chopped parsley (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F.
- Cook the beef mixture: Heat a large non-stick skillet over medium-high heat. Add the ground beef and diced onions. Crumble the beef and cook thoroughly until browned, then stir in garlic. Once fully cooked, mix in the cheddar soup, mushroom soup, 1/2 cup of milk, salt, and pepper. Stir well to combine. Then, mix in 1 cup of shredded cheddar cheese and remove the skillet from heat.
- Prepare the baking dish: Spray a 9 x 13 inch baking dish with cooking spray. Pour the ground beef mixture into the dish and spread it out evenly. Sprinkle 1 cup of shredded cheddar cheese over the top.
- Prepare the biscuit topping: In a large mixing bowl, pour the Cheddar Bay Biscuit mix (excluding the seasoning packet) and stir in the shredded cheddar cheese and 2 cups of milk until no large lumps remain.
- Assemble the cobbler: Pour the biscuit batter evenly over the ground beef mixture in the baking dish.
- Bake the cobbler: Place the dish in the preheated oven and bake for 50–55 minutes, or until the biscuit topping is nicely browned and cooked throughout.
- Add final touches: Combine the melted butter with the reserved seasoning packet from the biscuit mix. After removing the cobbler from the oven, brush the butter mixture evenly over the top of the cobbler. Allow it to rest for 5 minutes to soak in the butter and thicken the filling.
- Garnish and serve: Sprinkle fresh chopped parsley on top if desired. Serve while warm and enjoy!
Notes
- If you prefer a crispier biscuit topping, broil the dish for 1–2 minutes at the end of baking, but watch closely to prevent burning.
- This dish can also be prepared in advance and warmed up before serving. Store leftovers in the refrigerator for up to 3 days.
- Customize the dish by using your favorite soup flavors or adding vegetables like peas or mushrooms to the beef mixture.
