Chicken and Marinade

  • 2 tablespoons avocado oil

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard

BBQ Sauce

  • 1 cup BBQ sauce, plus more for serving

Instructions

  1. Marinate the chicken: Add the chicken thighs to a large sealable container along with avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard. Toss thoroughly to coat all pieces evenly. Seal and refrigerate for at least 1 hour or up to overnight to develop deeper flavor. (Skipping marination is possible but flavor is enhanced with this step.)
  2. Bake the chicken thighs: Preheat the oven to 425°F. Line a large baking sheet with parchment paper, aluminum foil, or a silicone mat for easy cleanup and to prevent sticking. Toss the marinated chicken thighs with 1/4 cup of the BBQ sauce, reserving the rest for glazing. Arrange the thighs on the lined baking sheet, leaving excess sauce behind. Bake for 15 minutes.
  3. Flip and glaze: Remove the chicken from the oven, turn each piece over, and brush thoroughly with the reserved BBQ sauce. Return to the oven and bake for an additional 10 minutes.
  4. Broil for caramelization: Remove the baking sheet, increase the oven temperature to broil, and flip the chicken thighs once more. Brush generously with BBQ sauce to create a thick glaze. Broil the chicken for 5-6 minutes or until the edges are crispy and caramelized, keeping a close eye to prevent burning especially if using parchment paper.
