    • 2 1/2 cups Bob’s Red Mill Gluten Free All Purpose Flour
    • 1 1/2 tsp salt
    • 1/2 tsp baking soda
    • 1/2 tsp xanthan gum

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and allow it to preheat fully while you prepare the cookie dough. This ensures even baking.
  2. Cream Wet Ingredients: In a large mixing bowl, combine the Butter Flavoured Crisco, light brown sugar, and granulated sugar. Use an electric mixer to beat the mixture until creamy and smooth, with no large lumps of sugar remaining.
  3. Add Egg, Apple Sauce, and Vanilla: Crack in the large egg, add the apple sauce, and pour in the vanilla extract. Continue mixing with the electric mixer until the mixture is fully incorporated and smooth.
  4. Add Dry Ingredients: Add the Bob’s Red Mill Gluten Free All Purpose Flour, salt, baking soda, and xanthan gum to the wet mixture. Blend with the electric mixer until all the flour is integrated and the cookie dough is uniform.
  5. Stir in Caramel & Butterscotch: Add Skor Bits and Butterscotch Chipits to the dough. Use a rubber spatula to gently fold these in, ensuring they are distributed evenly throughout the dough.
  6. Shape the Cookies: Using a 1 Tbsp scoop, drop dough onto a parchment-lined cookie sheet. Alternatively, roll dough into one-inch balls, spacing each at least two inches apart on the baking sheet to allow for spreading.
  7. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cookies are golden brown around the edges but still soft in the center.
