Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and promote even baking.
- Make the Cookie Dough: In a mixing bowl, cream together 1/2 cup softened butter, 3/4 cup granulated sugar, and 1/4 cup dark brown sugar until light and fluffy. Beat in 1 large room temperature egg, 2 tablespoons concentrated apple juice, and 1 teaspoon vanilla extract until well combined. In a separate bowl, whisk together 2 cups all-purpose flour, 3/4 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/4 teaspoon ginger, 1/8 teaspoon allspice, 3/4 teaspoon baking soda, 1/4 teaspoon baking powder, and 1/4 teaspoon salt. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
- Form and Bake Cookies: Scoop the cookie dough onto the prepared baking sheet, spacing them evenly. Bake in the preheated oven for about 12 minutes or until the edges are golden brown and the centers are set. Remove from the oven and allow the cookies to cool completely on a wire rack before frosting.
- Prepare Caramel Cream Cheese Frosting: In a bowl, beat together 5 oz softened cream cheese and 4 tablespoons softened butter until smooth and creamy. Add 3 tablespoons caramel sauce and 1 teaspoon vanilla extract, mixing well. Slowly add 3/4 cup powdered sugar and 1/4 cup flour to the mixture and beat until light and fluffy. Set aside.
- Make Streusel Topping: Combine 1 tablespoon granulated sugar, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt in a small bowl. Cut in 1 1/2 tablespoons cold, cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Assemble Cookies: Spread or pipe a generous layer of the caramel cream cheese frosting onto each cooled cookie. Sprinkle the streusel topping evenly over the frosting. Top with fresh green apple cubes and drizzle additional caramel sauce if desired.
- Serve and Enjoy: Allow the assembled cookies to set briefly before serving to enjoy the full blend of textures and flavors.
