Main Ingredients:
- 2 tbsp olive oil
- 1 small yellow onion, diced
- 1lb ground beef
- 10 oz romaine lettuce, chopped
- 3 roma tomatoes, diced
- 1 cup pickles, diced if desired
- 1 cup shredded yellow cheddar cheese
Sweet Potatoes:
- 2 sweet potatoes
- 2 tbsp oil
Sauce:
- 1/3 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp pickle juice
- 1 tsp Worcestershire sauce
- 1/4 tsp smoked paprika
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
Instructions
- Preheat oven and prepare sweet potatoes: Preheat oven to 425F. Cut sweet potatoes into strips, toss with olive oil, and bake for 40 minutes.
- Cook the beef: Sauté onions, add ground beef, and cook until browned.
- Assemble the bowls: Divide lettuce, meat, tomatoes, pickles, and cheese into three bowls.
- Prepare the sauce: Whisk together mayonnaise, ketchup, mustard, pickle juice, Worcestershire sauce, paprika, onion powder, and garlic powder.
- Finalize the bowls: Add sweet potatoes to each bowl and drizzle with sauce.
