Ingredients
Units
Scale
- 8 ounces cream cheese, softened
- 5 ounces Frank’s Red Hot Original Sauce
- 1/2 cup blue cheese, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1 cup Colby-Jack cheese, shredded
- 1/3 cup green onions, chopped
- 1 rotisserie chicken, shredded (about 3 cups)
- 5 large flour tortillas
Instructions
- Prepare the buffalo mixture:
In a large mixing bowl, combine the softened cream cheese, Frank’s Red Hot Original Sauce, blue cheese, salt, garlic powder, Colby-Jack cheese, and chopped green onions. Using a hand mixer, blend the ingredients until smooth and no cream cheese chunks remain. - Add the shredded chicken:
Add the shredded chicken to the buffalo mixture. Stir well with a large spoon until all the chicken is evenly coated with the buffalo sauce mixture. - Spread and roll:
Spread about ¾ cup of the prepared buffalo chicken mixture onto a large tortilla. Roll the tortilla up tightly, trying to ensure the filling stays evenly distributed and doesn’t shift too much. - Chill the rolled tortillas:
Wrap each tortilla roll tightly with plastic wrap and refrigerate for 2 to 4 hours. This helps the filling set and makes slicing easier. - Slice and serve:
After chilling, remove the tortilla rolls from the refrigerator. Use a sharp knife to slice the rolls into pinwheels, discarding the end pieces. Arrange the slices on a platter and serve immediately.
Notes
- You can substitute rotisserie chicken with oven-baked, shredded chicken.
- Ensure that all ingredients are chopped evenly for a uniform and visually appealing mixture.
- Room temperature cream cheese prevents lumps and ensures a smoother texture.
- Secure each pinwheel with a toothpick to prevent unrolling.
- Do not skip the chilling step—it makes slicing much easier and ensures the pinwheels hold their shape.
