Bruschetta Chicken Casserole is a flavorful and healthy dish that combines tender chicken, ripe tomatoes, melty mozzarella cheese, and fresh basil, all baked to perfection with a hint of balsamic and garlic. - 1 lb. chicken breasts or tenders, cut into bite-sized pieces
- 1 Tbsp avocado oil or olive oil
- Sea salt and ground black pepper, to taste (about 1/4 teaspoon each)
For the Bruschetta Topping
- 6 ripe Roma tomatoes, chopped and lightly sprinkled in sea salt
- 3 fresh garlic cloves, crushed or chopped
- 1 tsp dried oregano
- 2 Tbsps high quality balsamic vinegar
For the Casserole Finish
- 1 cup shredded mozzarella cheese
- A small handful of fresh basil leaves, chopped
- Cooking spray, for greasing the baking dish
Instructions
- Preheat Oven – Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Chicken – Heat the avocado or olive oil in a skillet over medium-high heat. Add the bite-sized chicken pieces to the skillet and season with sea salt and freshly ground black pepper. Cook, occasionally stirring, until chicken is golden brown on the sides and almost cooked through.
- Assemble Casserole – Spray or brush an 8×8-inch baking dish with cooking spray or oil. Transfer the cooked chicken to the baking dish. Top evenly with the chopped Roma tomatoes, oregano, garlic, and a drizzle of balsamic vinegar.
- Add Cheese & Bake – Sprinkle the mozzarella cheese over the top of the chicken and tomato mixture. Place the casserole in the preheated oven, uncovered, and bake for 18-20 minutes or until the cheese is melted and the sauce is bubbling at the bottom of the dish.
- Rest & Garnish – Remove the casserole from the oven, cover, and let it rest for 5 minutes. Garnish with freshly chopped basil before serving.
Notes
- Use cherry tomatoes if Roma tomatoes are not available for similar flavor and texture.
- Substitute mozzarella with provolone or a cheese blend if preferred.
- Letting the casserole rest allows the juices to redistribute and makes serving easier.
- Add a sprinkle of crushed red pepper for a slight kick.
