This Healthy BLT Chicken Salad is a delicious twist on the classic BLT sandwich, combining tender chunks of poached chicken with crispy bacon, cherry tomatoes, and a creamy, tangy dressing.

Poached Chicken:

  • 23 lbs chicken breast
  • 1 tsp kosher salt
  • 1 tbsp peppercorns
  • 2 cloves garlic
  • 2 bay leaves, dried

Chicken Salad:

  • 6 cups cooked chicken breast, chopped
  • 12 slices center cut bacon
  • 1 large red onion, chopped
  • 1 pint cherry tomatoes, halved
  • 1 bunch scallions, chopped
  • 1/2 cup light mayo
  • 3/4 cup plain non-fat Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat the oven: to 425F.
  2. Cook Bacon: Lay bacon on a baking sheet with chopped red onion. Roast for 15 minutes until crispy.
  3. Mix Dressing: In a bowl, combine mayo, yogurt, vinegar, paprika, garlic, and onion powder.
  4. Assemble Salad: Add tomatoes, scallions, cooked onion, chicken, and bacon to the dressing. Mix gently.
  5. Poach Chicken: In a pot, cook raw chicken with salt, garlic, peppercorns, and bay leaves until internal temp reaches 165F.
