Base Ingredients
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 (11.3 oz) container Kaukauna Extra Sharp Cheddar Spreadable Cheese
- 3/4 cup beer
Thickening Agents
- 2 tablespoons water
- 2 tablespoons cornstarch
Seasoning
- Salt and fresh ground pepper, to taste
Instructions
- Prepare the cornstarch mixture: In a small bowl, whisk together the cornstarch and water until they are well combined. Set aside.
- Sauté garlic in butter: In a large saucepan over medium-high heat, melt the butter. Add the minced garlic and sauté for 30 seconds, or until fragrant, being careful not to let it burn.
- Add cheese and beer: Add the container of spreadable cheddar cheese into the saucepan, breaking it up with a spatula. Pour in the beer and stir continually until the cheese fully melts and the mixture becomes creamy.
- Incorporate the cornstarch mixture: Re-whisk the cornstarch and water mixture to ensure it’s smooth, then pour it into the saucepan with the cheese mixture. Stir well, cooking for about 5 minutes, or until the dip thickens while continuing to stir frequently.
- Season and serve: Finally, season the dip with salt and fresh ground pepper to taste. Serve the beer cheese dip warm and enjoy!
Notes
- Storage: Once fully cooled, refrigerate any leftovers in an airtight container for up to 5 days. To reheat, add 1 teaspoon of milk and microwave in 20-second intervals, stirring frequently. Alternatively, reheat in a small pot over medium-low heat until warmed through.
- Keep it warm: For parties, transfer the dip to a crockpot or fondue pot and keep the heat setting on LOW. Stir occasionally to maintain its consistency. You can triple the recipe and use a 6-quart crockpot to serve a crowd.
- Cheddar spreadable cheese: Use Kaukauna brand extra sharp or regular sharp cheddar for the best flavors. Found in the refrigerated cheese section in small tubs with blue or black lids.
- Beer selection: Choose a medium-bodied or light beer for balance. Avoid strong or hoppy beers like IPAs; instead, use ales, lagers, or even non-alcoholic beer for a mild flavor.
