Bang Bang Sauce
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon honey
- 1 tablespoon Sriracha
- 1 teaspoon rice wine vinegar
Chicken Marinade
- 1 tablespoon soy sauce
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons light brown sugar
- 2 teaspoons sesame oil
- 2 teaspoons oyster sauce
- 1 teaspoon ground ginger
- 1 pound boneless, skinless chicken thighs (cut into 1-inch cubes)
Assembly
- 8 (6″) wooden skewers, soaked in water
- 1 green onion, thinly sliced
Instructions
- Prepare Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, honey, Sriracha, and rice wine vinegar. Whisk together until smooth and set aside.
- Marinate Chicken: In a small bowl, whisk together soy sauce, garlic powder, onion powder, brown sugar, sesame oil, oyster sauce, and ground ginger. Pour over chicken cubes and stir to coat evenly. Cover and refrigerate for 30 minutes to marinate.
- Soak Skewers: About 30 minutes before cooking, soak wooden skewers in water to prevent burning.
- Skewer Chicken: Pierce 6 to 8 pieces of marinated chicken onto each skewer, leaving small gaps between pieces.
- Preheat Air Fryer: Lightly spray the air fryer basket with cooking spray. Arrange skewers in a single layer with space between each, cooking in batches if necessary.
- Cook Skewers – First Side: Brush each skewer generously with the prepared Bang Bang sauce. Air fry at 400˚F (200˚C) for 8 minutes.
- Flip and Apply Sauce: Flip the skewers, brush with more sauce, and air fry for an additional 5 minutes or until chicken is cooked through and slightly crispy.
- Finish and Serve: Remove skewers from the air fryer, transfer to a serving dish, drizzle with extra bang bang sauce if desired, garnish with sliced green onion, and serve hot.
Notes
- Use boneless, skinless chicken thighs for juicier, more flavorful skewers.
- Soaking wooden skewers prevents them from burning in the air fryer.
- Marinate the chicken for at least 30 minutes for optimal flavor; up to 24 hours for even more tastiness.
- Bang Bang Sauce can be prepared up to 5 days in advance and stored in the refrigerator.
- Skewered chicken can be prepped a day ahead and refrigerated until ready to cook.
