Description

This Baked Chicken Parmesan recipe is a delicious and easy dish that the whole family will love. Tender chicken breasts coated in crispy breadcrumbs, topped with marinara sauce and melted cheese, served alongside roasted broccoli. A perfect weeknight meal!

For the Chicken:

  • 1 large egg
  • 1/2 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • Olive oil-flavored cooking spray

For the Broccoli:

  • 4 cups fresh or frozen broccoli florets (about 10 ounces)

For Assembly:

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup minced fresh basil, optional

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Lightly coat a 15x10x1-inch baking pan with cooking spray.
  2. Prepare the Chicken: In a shallow bowl, whisk the egg. In a separate shallow bowl, stir together the panko bread crumbs, Parmesan cheese, salt, pepper, and garlic powder. Dip each chicken breast in the egg, then in the crumb mixture, patting to help coating adhere. Place chicken breasts in the center of the baking pan and spritz with cooking spray.
  3. Bake the Chicken: Bake for 10 minutes. Remove from the oven.
  4. Add Broccoli: Spread broccoli in a single layer along both sides of the sheet pan. Return to oven and bake for an additional 10 minutes.
  5. Assemble and Broil: Preheat the broiler. Spread marinara sauce over the chicken, then top with shredded mozzarella cheese. Broil the chicken and broccoli for 3-5 minutes, until the cheese is golden brown and the vegetables are tender. Sprinkle with minced basil, if desired.
