Description

These Baked BBQ Chicken Drumsticks are a flavorful and juicy recipe featuring a blend of spices and a delicious sugar-free BBQ sauce. Perfectly seasoned and oven-baked to tender perfection, they make an ideal meal for a casual dinner or gathering.

Ingredients

Units Scale

Chicken Drumsticks

  • 4 pounds Chicken drumsticks (about 12 pieces)

Seasoning Mix

  • 2 tablespoons Garlic powder
  • 2 tablespoons Onion powder
  • 2 tablespoons Chili powder
  • 2 tablespoons Smoked paprika
  • 1 tablespoon Ground ginger
  • 2 teaspoons Salt
  • 1 teaspoon Pepper

Sauce

  • 2 cups Sugar-free BBQ sauce or low sugar BBQ sauce

Instructions

  1. Season the chicken: In a mixing bowl, combine the chicken drumsticks with garlic powder, onion powder, chili powder, smoked paprika, ground ginger, salt, and pepper. Use your clean hands to rub the seasoning mixture generously all over each drumstick to ensure even coating.
  2. Marinate: Place the seasoned drumsticks in the refrigerator to allow the flavors to penetrate the meat. Let them marinate for at least 30 minutes for best results.
  3. Preheat the oven: Set your oven to 350°F (175°C) and line a roasting tin with aluminum foil for easy cleanup. If available, place a wire rack inside the tin to allow air circulation around the drumsticks.
  4. Arrange for baking: Transfer the drumsticks onto the wire rack in the roasting tin, spacing them out slightly to ensure even cooking.
  5. First bake: Bake the drumsticks in the middle rack of the oven for 40-50 minutes. Flip the drumsticks halfway through the baking time to ensure they cook evenly on all sides.
  6. Apply BBQ sauce and continue baking: After the initial bake, remove the drumsticks from the oven and brush them thoroughly with the sugar-free BBQ sauce. Return them to the oven and bake for an additional 10-15 minutes. Flip the drumsticks, brush with more BBQ sauce, and bake again for another 10-15 minutes to build a flavorful glaze.
  7. Serve: Once the baking is complete and the chicken is cooked through with a sticky glaze, remove from the oven. Serve immediately for a delicious meal.

Notes

  • The serving size is 2 drumsticks per person.
  • Oven temperatures may vary; some ovens might require an additional 15-20 minutes of cooking or an increase in temperature to 400°F for well-done chicken.
  • You can substitute chicken breast or thighs if preferred.
  • Use your favorite healthy BBQ sauce, preferably sugar-free or low sugar.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave before serving.
  • For longer storage, freeze in ziplock bags for up to 3 months.
