- Preheat Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Separate Eggs: Carefully separate the egg whites from the yolks, placing the whites into a large mixing bowl and each yolk into individual small ramekins to make adding them back easier later on.
- Beat Egg Whites: Using an electric mixer, beat the egg whites until stiff peaks form, which typically takes about 2 minutes. This will give your egg clouds their airy texture.
- Fold in Ingredients: Gently fold in the grated Parmesan cheese, crumbled bacon, and sliced green onions or chives without deflating the whipped egg whites.
- Shape Egg Whites: Spoon four mounds of the egg white mixture evenly onto the prepared baking sheet and create a small well in the center of each mound with the back of a spoon to hold the yolk later.
- Bake Egg Whites: Place the baking sheet in the preheated oven and bake for 3 minutes to start setting the egg whites.
- Add Yolks: Remove the pan and carefully place one egg yolk into each well formed in the mounds of egg whites.
