Description

These Apple Cinnamon Bites are healthy, no-bake energy balls made from dates, oats, and fresh apple, flavored with warm cinnamon and ginger. Wet Ingredients

  • 1 cup dates (about 10 Medjool dates, pitted)
  • 1 cup grated apple (from 2 small apples or 1 large apple)


Instructions

  1. Soften Dates: Remove stems and pits from the dates if needed. Place them in a small bowl, cover with hot water, and let them soak for 5 minutes to soften. Drain the water and set the dates aside.
  2. Process Oats: Add the rolled oats to a food processor and blend for 30 to 60 seconds until the oats reach a coarse sand-like texture.
  3. Prepare Apples and Add Spices: Grate the apples using a box grater to measure 1 cup. Add the grated apple, cinnamon, ginger, and salt into the food processor with the processed oats.
  4. Blend Ingredients: Add the softened dates to the food processor and blend everything together for about 1 minute until a smooth dough ball forms. Scrape down the sides and pulse again as needed to ensure all ingredients are well combined.
  5. Form Energy Balls: Using a tablespoon, scoop the dough and roll it into small bite-sized balls. This recipe makes approximately 15 energy balls.
