These 3-Ingredient Healthy Peach Creamsicles are a delightful and refreshing treat perfect for hot summer days. Made with fresh peaches and creamy cashews, they are a guilt-free indulgence the whole family will love.

Fresh Peach Puree:
- 1 1/2 lbs peaches, fresh or frozen (about 3-4 large or 4-5 small peaches)
- 2–3 tablespoons honey
Cashew Cream:
- 3/4 cup raw cashews, soaked for at least 4 hours at room temperature or in the fridge overnight
- 2–3 tablespoons honey
- 1/2 cup + 2 tablespoons fresh water
Instructions
- Blend Peach Puree: Place peaches in the blender, add honey, and puree until smooth. Pour into a glass measuring cup.
- Prepare Cashew Cream: Blend soaked cashews, honey, and water until smooth, adjusting water as needed for consistency.
- Layer and Freeze: Layer peach puree and cashew cream in popsicle molds, freeze for at least 6 hours until solid.
- Serve: Run warm water on the mold to release the creamsicles and store in a ziplock bag. Enjoy!
Notes
- MAKE IT VEGAN: Substitute maple syrup for honey.
- MAKE IT NUT-FREE: Replace cashew cream with a mixture of coconut milk and honey.
- Soak cashews for at least 4 hours, or speed up by pouring boiling water over them and letting sit for 30 minutes to 1 hour.
