  • Creole Cajun Seasoning, to taste
  • 2 tablespoons olive oil

For the Creamy Garlic Herb Sauce:

  • 1 tablespoon unsalted butter
  • 1 shallot, finely diced
  • 10 cloves of garlic
  • 1 cup chicken stock or broth
  • 1 tablespoon fresh-squeezed lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon dijon mustard
  • 1 cup heavy whipping cream
  • 1 tablespoon fresh tarragon, roughly chopped, plus more for garnish
  • 1 tablespoon fresh parsley, finely chopped
  • 1/3 cup fresh-grated parmesan cheese

Instructions

  1. Season the Chicken: Pat the chicken breasts dry and sprinkle with Creole Cajun seasoning. Massage the seasoning into the chicken.
  2. Sear the Chicken: Sauté the chicken in a skillet until golden. Set aside.
  3. Make the Sauce: Sauté shallot and garlic, then add stock, lemon juice, spices, mustard, cream, herbs, and parmesan.
  4. Finish Cooking: Return chicken to the pan, simmer until cooked through.
  5. Adjust Seasoning: Taste sauce and adjust seasoning as needed.
